Easy Garlic Butter Steak Bites Recipe

Ingredients
  

  • 1 1/2 lb Sirloin steak cut into bite size pieces (or strip or ribeye steak)
  • 1/2 tsp Kosher salt
  • 1/2 tsp pepper
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1/4 tsp red pepper flakes more or less to taste
  • 1 tbsp parsley

Instructions
 

  • Pat steak dry with paper towel. Cut steak into 1-inch cubes so that they're small,bite-sized pieces. Season generously with salt and pepper.  *
  • Heat a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
  • Add the steak cubes in a single layer. Sear for 2-3 minutes per side, or until a golden crust forms. Work in batchesif necessary to avoid overcrowding the hot skillet. Remove cooked steak and set aside.
  • In the same skillet, add the butter. Turn the heat down to medium, and stir butter continuously so it doesn't burn. Once melted, add garlic and red pepper flakes. Cook for approximately 30 seconds until fragrant.
  • Return the seared steak bites to the skillet and toss them in the garlic butter sauce. Cook for an additional 1-2 minutes, until steak pieces are fully coated. Serve immediately with chopped parsley as a garnish. 

Notes

*Room temperature steak can be difficult to cut into small, even-sized pieces.  If needed, flash freeze the steak for about 15-20 minutes prior to cutting it. Then, cut the cold steak into even-sized pieces.  This slice-and-freeze method also works well with other animal protein, like chicken and pork. 
 
Store leftover steak bites in an airtight container in the refrigerator for up to 3 days.  To reheat, place in a skillet over low heat until they are heated through so that they retain their tenderness and flavor.
